LemonCookies- DOROTHY’S

1 lemon cake mix
1 egg
1 container cool whip (large)
I also add 1 tablespoon lemon juice and 1 teaspoon lemon zest.

Mix above together and roll into balls. Roll the balls in icing sugar.
Place on cookie sheet and bake for 10 - 15 min. @ 325'. Check closely so theydon't burn.

Barb’s

Lemon cake mix

½ cvegetable oil

3 eggs

Squirt oflemon juice

Hand mixthen use mixed until pale yellow.

Use tsp todrop on parchment lined cookie sheet.

Bake at 325for 10-15 min. Watch carefully.

ALMOND BARK

1 cup whole almonds or crasins

1 tsp butter

1 pound of white chocolate or other chocolate wafers

1 Place almonds and butter in glass pie plate.

Microwave on Hi for about 2 minutes. Stir often. Set aside.

2 Melt chocolate (in microwave safe bowl) on high for about 1 minute - STIR.

High again for about 1 minute – STIR and another minute until chocolate is melted.

Do not over heat as chocolate will clump up.

3 Add almonds to melted chocolate.

4 Spread mixture thinly on waxed paper lined cookie sheet.

Refrigerate until set. Break into pieces to serve.

ALTERNATIVES

Instead of almonds you can use craisins.(sweeetend dried cranberries)

Or after spreading chocolate add crushed up candy canes to the top of the chocolate

If you use chocolate – you can add some salted nuts or broken caramel to the mixture.

Use your imagination.

White chocolate – use wafers. Melt chocolate in microwave a lot safer and easier
